Method:
  • Weigh all Stage 1 materials into a stainless steel bowl and place into a saucepan of boiling water (double boiler/bain marie). Bring up to a temperature of over 70°C whilst stirring continuously. This is important to stop it from going lumpy.
  • Put the Stage 2 materials into a separate stainless steel bowl. When the Stage 1 has hydrated and formed a thick gel remove the bowl from the double boiler and put into a pan of cold water to cool it down quickly. Keep stirring all the time.
  • When the gel is under 40°C add the combined Stage 2 ingredients. Stir thoroughly, jar and label.
